A versatile professional, Mayuri is not only a seasoned photographer based in Chennai but also possesses a keen culinary flair. During the event, she captivated the audience with the demonstration of two exquisite dishes. The Sri Lankan-style prawn curry, featuring moringa leaves, pandan leaves, and the quintessential coconut milk, showcased the essence of traditional Sri Lankan flavors. Additionally, Wambatu Moju, presented in two variations – one with tamarind and another with vinegar – brought a delightful twist to the event.
Wambatu Moju, meaning “eggplant pickle” in Sinhalese, is a popular Sri Lankan condiment. Its preparation involves sautéing eggplant with a medley of spices, creating a harmonious blend of sweet, sour, and spicy flavors.
Mayuri shed light on the significance of coconut milk in Sri Lankan cuisine, emphasizing its prevalence in various dishes. Pandan leaves, equivalent to India’s curry leaves, impart a distinctive flavor while also acting as natural deodorizers. Exploring the dessert realm, she highlighted the use of Kithul jaggery, derived from the Caryota urens palm, in pastries, replacing conventional sugar.
Touching upon cultural aspects, Mayuri shared insights into Sri Lankan festivals. She highlighted Kiribath, a dish made from rice and coconut milk, as a cherished delicacy consumed during the Sinhalese New Year. Unveiling unique bakery delights like fish buns stuffed with Sambal, she showcased the culinary tapestry that defines Sri Lankan gastronomy.
